The history of Mombaruzzo Amaretti biscuits has a noble flavour. It all began thanks to the love that blossomed between a treasurer of the House of Savoy and a Sicilian pastry chef, famous for her almond specialities. It was culinary love at first sight. Together, they decided to create something unique: A slightly bitter treat with a golden crust and a tender heart, which won over the palates of the Savoy court. Thus, Amaretto Morbido was born.
After retiring from service, the couple moved to Mombaruzzo, a small town in the Asti Monferrato area. Here they opened a small pastry shop, and amaretti biscuits became the house speciality.
Since then, the art of preparing this delicacy has been handed down through generations of mombaruzzesi master bakers, which still today use only simple but essential ingredients such as peeled almonds, egg whites and sugar, without using flour or yeast. Instead, it is the bitter almonds, with their bitter aftertaste, that give these sweets their unique character.
